Cancer Chemoprevention by the Components of Fruits and Vegetables

Abstract

Cancer is the most leading cause of deaths in Korea as well as the world, the number of new cases will continue to rise. The major responsibility to cancer is thought to be the life-style related dietary customs rather than to exposure to environmental carcinogens. According to the rapid changes of life-style in modern Korean population, the prevalence and mortality pattern of cancers are similar to those of Western country such as Japan and USA. The rapidly reduced consumption of cereal, vegetables and fruits will devote to increased consumption of meat and higher calories foods. Some components of vegetables and fruits will be helpful to reduce or prevent some cancers. Especially, lycopene which were contained in tomatoes will be reduced the prostate or lung cancer, dietary fibers from vegetables will be reduced the colon cancer. Soy consumption was associated with a reduced risk of breast cancer. Therefore Korean must adhere to maintain the Korean traditional custom such as higher consumption of vegetables and fruits with cereals (barley and rice-rich foods). They should be learn the higher activities in their life will be good for their healthy life.
